1 cup whole brown rice, rinsed well
1 can (13.5–14 oz) natural coconut milk
1½ cups water (plus more if needed during cooking)
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
5 Medjool dates, pitted and chopped
Optional pinch of sea salt (to brighten flavors)

Prepare the brown rice.
Rinse the brown rice under cool water until the water runs mostly clear. It will have a cleaner taste without dirt, stems, pebbles :)
Load the slow cooker
Add the rice, coconut milk, water, cinnamon, cardamom, chopped dates, and salt (if using) to your crock pot.
Stir gently to combine.
