This baked oatmeal is warm, filling, naturally sweet, and made entirely from whole, plant-based ingredients. It’s perfect for Daniel Fast mornings, meal prep for the week, or sharing with family as a grounding, gratitude-filled breakfast.

🥣 Base Ingredients
2 cups old-fashioned rolled oats
1½ cups water or unsweetened almond milk
1 cup unsweetened applesauce
2 ripe bananas, mashed
1 cup frozen blueberries

¼ cup chopped dates
¼ cup chopped nuts (walnuts or almonds work well)
¼ cup unsweetened coconut flakes
¼ cup chopped dried apricots
¼ cup unsweetened raisins

1 teaspoon ground cinnamon
½ teaspoon vanilla powder
Pinch of sea salt
🕊️ Instructions
Preheat the oven
Preheat to 375°F (190°C). Lightly grease an 8×8-inch baking dish with a small amount of coconut oil or olive oil.
Mix the wet ingredients
In a large bowl, mash the bananas thoroughly.
Stir in the applesauce and water or almond milk until smooth.
Add the dry ingredients
Add the oats, cinnamon, salt, and any optional add-ins you’re using.
Stir gently until everything is evenly combined.
Add the fruit
Gently stir in the frozen blueberries last to keep them from getting smooshed.
Bake
Pour the mixture into the prepared baking dish and spread evenly.
Bake uncovered for 35–40 minutes, until cooked through in the center and lightly golden around the edges.
Rest and serve
Let cool for 5–10 minutes before serving. The oatmeal will firm up as it rests.
